Mo’Bay plans Valley Post opening by 2026

Mobile-based Mo’Bay Beignet Co. plans to open a Chelsea location at Valley Post, combining its beignet business with sister burger brand Bay Town Burger Co. under the name Mo’Bay Beignet & Burger Co. Founder Jaclyn Robinson says the Birmingham-area restaurant will have a distinct concept, unlike the company’s other locations. The opening is targeted for before the end of 2026, though no specific date has been announced. The restaurant is among new businesses expected to revive Valley Post after several restaurants closed there in April amid financial difficulties.
