Utah State introduces Highland steers as live mascots

Utah State University has introduced Thistle, a live mascot represented by two Highland steers, Thistle 1 and Thistle 2, who are expected to join university events beginning in fall 2027. Their name honors Scotland’s emblem and connects to USU’s Scottish heritage and the Aggie song “The Scotsman.” The university says the steers will appear at athletic, campus and community events, while also supporting hands-on student learning in animal care, livestock management and public engagement. USU chose the calm, social Highland breed and plans to keep the pair together as they take on their ambassador roles.
