How to carve a turkey
For home cooks facing a whole roast who want neat, moist slices without a messy fight at the board.

You free each large section at the joint before you slice across the grain. That keeps pieces intact and the juices on the platter instead of the board.
Before you start: a sharp thin carving knife, a carving fork, a large cutting board, a damp towel to grip the board, and a warm serving platter.
Juices settle back into the meat so they do not flood the board at the first cut. Press the thickest part of the breast with one fingertip; it should spring back and feel warm, not scorching. If a thin stream runs out when you nudge a leg, wait five more minutes.
A fixed board stops the bird from spinning under the knife. Give the board a light sideways shove; it must stay put. If it skids, refold the towel so more damp cloth grips the counter.
The joint yields with a soft pop when the knife finds the gap instead of bone. You will see the ball of the joint separate cleanly. If the edge hits hard bone, ease back about half an inch and aim for the soft crease.
One smooth lift keeps the skin from tearing. The quarter should come off in a single piece with no meat strings left on the backbone. If a strip of skin still tethers it, snip that last bit with the knife tip.
The wing drops when the tip slips into the soft spot at the shoulder. The cut face should look like a clean knuckle, not splintered bone. If you meet resistance, wiggle the wing to show the joint line and cut there.
Long strokes give wide even slices about a quarter inch thick. Each slice should hold together when you lift it with the fork. If the meat shreds or the knife drags, slow the stroke and keep the path parallel to the bone.
Bending opens a pale seam where the knife belongs. The two pieces part without cracking bone. If you strike dense bone, back up and probe for the softer line with the tip.
The most common mistake
Most people saw straight down through the breastbone and leave ragged chunks on the carcass. Work from the outside of each breast in toward the bone so each slice releases clean.
